Flat Clapton wire is a braided wire especially suitable for DL enthusiasts, i.e. big clouds and flavour.
The advantages of stainless steel are especially its high resistance to corrosion. You can use stainless steel resistance wire either in the classic VW mode (like Kanthal) or in the VT/CT mode that advanced grips have.
